Chili

 

Ingredients:
5 oz ground Bison
1 medium yellow zucchini squash
1 medium tomato
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp cayenne (optional)
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp oregano

Instructions:
Start by cooking your ground bison in a skillet, on the stove over medium heat. While that cooks, chop your yellow zucchini squash and tomato into nickel sized chunks. Take yellow zucchini and crisp up in the oven or on the stove top. Once the beef is done cooking remove from pan and set aside. Take a medium sized pot for the chili and add beef broth. Turn heat to medium and add bison, tomatoes, yellow zucchini and spices. Stir together well and cook over medium-high heat for 8-10 minutes. This cooks the ingredients well and locks in all the flavor! If you like this recipe, remember it’s easy to make ahead and freeze! Especially delicious for those cold dreary days. Enjoy!
