Zucchini Lasagna

Zucchini Lasagna
Ingredients: (2 servings)
  • 2 large zucchini’s
  • 8 oz ground beef
  • 15 oz can of tomato sauce (no salt or sugar added!)
  • 1 tsp basil
  • 1 tsp oregano
  • 1/2 tsp pink sea salt
  • 1/2 tsp ground pepper
  • Spice Girls Cheesy Pizza Seasoning
Start by thinly slicing your zucchini’s, you can do this by using a potato peeler if you have one, the side section of a cheese grater or simply by cutting with a knife. The goal is to cut as thinly as possible. If using knife method, cut zucchini in half and lay cut side down on cutting board. Use knife to cut horizontally down the zucchini until you are at the end. Repeat for other 3 zucchini sections. Place one layer in your chosen pan until it’s completely covered and preheat oven to 400 degrees. Next cook your beef over medium heat in a nonstick skillet. Season with salt and pepper. To the pan add 3/4 or 11oz tomato sauce to your beef. Turn heat to medium and cook for several minutes adding basil, oregano, salt and pepper. Next add half of the mixture ontop of existing zucchini layer in pan. Add second layer of zucchini slices then add remainder of meat and sauce mixture. With the rest of your tomato sauce, warm in same pan you used to cook beef- seasoning with basil, oregano, salt and pepper. After 2-3 minutes of warming pour sauce on top of the last zucchini layer. Add lots of your Spice Gal Cheesy Pizza seasoning to the top sauce layer then pop into oven for 15-20 minutes. Next: ENJOY!
