Pumpkin Deviled Eggs

Pumpkin Deviled Eggs


– 6 eggs
– 1 tsp yellow mustard
– 1 tsp xanthan gum
– 2 tbsp water
– 1/4 tsp paprika
– 1-2 stalks of green onions (chives)
– red food coloring

First boil your eggs. In a medium pot bring water to a boil then add eggs and simmer for 11 minutes. When time is up, remove eggs from pot and immediately place in an ice bath to cool eggs down. Then peel all eggshells and allow to cool for several minutes. Next cut the eggs in half vertically and squeeze yolk into a bowl. Add mustard, xanthan gum and water. Mix well with a fork until there are no lumps. Add a VERY small amount of red food coloring to mixture to produce a lovely orange! Spoon mixture into each egg white carefully. Sprinkle a dash of paprika on top for garnish then draw 3-4 vertical lines in the yolk to resemble a pumpkin. Next take your chives and cut 1/2 inch pieces. Place each piece on the outside ring of the yolk and BOO you’re ready for your Halloween party!
