Garlic Cauliflower Mash

– 5 oz cauliflower
– several stalks of green onion
– 1 clove fresh garlic, minced
– 1/2 cup chicken broth or broth of your choice
– 1/2 tsp salt
– 1/2 pepper
– 1/2 cumin
– parsley leaves chopped

Preheat oven to 400 degrees. On a baking sheet, spread out chopped cauliflower. Season with salt, pepper and cumin. Bake in oven for 12-14 minutes, or until tender in the middle. Next add cauliflower, minced garlic and green onion into a blender or food processor with 1/4-1/2 cup of broth and being with pulsing then continue to blend until smooth. Continue to add broth as needed to create a think cauliflower mash. Top with parsley and serve hot. Just add turkey and you’ve got yourselves a touchdown of a meal! Enjoy friends!
