Chocolate, Peanut Butter Cups
- one jar unsweetened peanut or almond butter
- 72% or lower dark chocolate / cacao bar\
Preheat oven to 275 degrees. Start by breaking each chocolate bar into chunks and place on the bottom of each muffin tin. Stick in oven for 5-7 minutes until chocolate is melted so you’re able to spread the chocolate on the bottom of the well. Stick in freezer for 10 minutes to harden. Next take your jar of peanut butter and spoon in 1-2 tablespoons of peanut butter into each well. Freeze for 15 minutes. Next break more chocolate and place a chunk on top of each peanut butter cup then place back into the oven for 5-10 minutes until melted. Spread around chocolate as the top layer and finally, put back in freezer for 1-2 hours. TIP: if you can’t get your cups out of the muffin tin, just freeze longer! Store in freezer and don’t feel so guilty for eating your healthy dessert! Happy Friday everyone!
